I cut the curry paste in half and just mixed the coconut milk in after processing. I do add double of the liquids as I like my soup to be soupy. Wanted to add that in our two-person household, we had leftover soup as I made the recipe exactly as written. I might use sea scallops instead of shrimp. I even messed up and forgot to sautee the squash with the onions and just added it in after the broth and it still came out well. Loved this recipe but like other reviews I didnt feel the Thai flavors were really there in the base recipe. But unfortunately, without having tried this myself, I cannot answer with certainty. I did make a few additions based on our personal tastes, but this was sooooo good! I found that it needed a bit of sweetness to finish and added in some coconut sugar, loved it. I like to use vegetable stock from my local Vietemese restaurant it really amps the asian flavors! Only thing I changed was to add a touch of sugar. As promised in its name: easy to prepare! In the end, I can see this soup being really good with some more subtle kinds of red curry paste, or with maybe 1 tablespoon of a stronger tasting paste like measri.
